Amish Salmon Loaf

A delicious fish-filled font of flavor. Make this a nice slice of salmon loaf for your supper!

Ingredients
  

  •   2 cans salmon
  • ¼ cup onion finely chopped
  • ¼ cup chopped parsley
  • ¼ cup lemon juice
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 2 cups cracker crumbs
  • ½ cup milk
  • 4 eggs, beaten
  • ¼ cup butter melted

Shrimp sauce

  • 1 can cream of shrimp soup
  • ½ cup milk

Instructions
 

  • Drain salmon.  Flake salmon into a bowl and mixwith onion, parsley, lemon juice, salt, pepper, and cracker crumbs.  Mix lightly. T
  • Then fill half of a cup with milk. Then pour in salmon juice.  Add enough additional milk to make one cup and then add eggs and melted butter. 
  • Add to the salmon mixture and thoroughlycombine all ingredients. 
  • Spoon into aloaf pan.
  • Bake at 350 for one hour

Sauce

  • Heat soup up according to instructions.  Mix in 1 /2 cup milk.  Stir until smooth.  Pour hot sauce over finished loaf.  Slice and serve.
