Potato Ranch Casserole

This is a delicious, hearty recipe that can be served meatless as a side, as a vegetarian main dish, or add ground beef and make it a meal! Great for potlucks or carry-ins!

Ingredients
  

  • 1 lb. Diced ham or browned hamburger
  • ¼ cup cup chopped onions
  • 1 cans cream of mushroom soup*
  • 1 2 quart cooked and shredded potatoes
  • 1 cup sour cream
  • 1 cup Ranch dressing
  • ½ pound mozzarella cheese (or any kind of your choice)
  • ½ pound fried and crumbled

Instructions
 

  • Mix all but last two ingredients together.
  • Place in a roaster, bake at 325 for 40 minutes or until heated through.
  • Sprinkle bacon and cheese on top,
  • return to oven until cheese has melted.
