Amish Double Butterscotch Cake

A gooey, super confection full of butterscotch goodness, perfect for dessert or even breakfast!

Ingredients
  

  • 1 /2 cup unsalted butter
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ cups buttermilk
  • 1 cup quick oats
  • 6 ounces of butterscotch chips

Instructions
 

  • Mix together butter and sugar.
  • Blend in eggs and vanilla, adding eggs alternately and stirring between. Stir well.
  • Sift together flour, salt, and soda. Add to butter mixture alternately with milk, mixing after each addition.
  • Stir in oats. Pour into greased 9 X 13 X 2 inch baking pan.
  • Sprinkle butterscotch chips onto the batter.
  • Bake at 350 for an hour. Cool before cutting.Topwith whipped topping if desired
