Amish Double Butterscotch Cake
A gooey, super confection full of butterscotch goodness, perfect for dessert or even breakfast!
- 1 /2 cup unsalted butter
- 1 cup packed brown sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 ½ cups buttermilk
- 1 cup quick oats
- 6 ounces of butterscotch chips
Mix together butter and sugar.
Blend in eggs and vanilla, adding eggs alternately and stirring between. Stir well.
Sift together flour, salt, and soda. Add to butter mixture alternately with milk, mixing after each addition.
Stir in oats. Pour into greased 9 X 13 X 2 inch baking pan.
Sprinkle butterscotch chips onto the batter.
Bake at 350 for an hour. Cool before cutting.Topwith whipped topping if desired
