Mennonite Sheet Pan Honey Mustard Chicken and Vegetables

Ingredients
  

  • cup honey
  • ¼ cup dijon mustard
  • 1 tablespoon white wine vinegar
  • 1 teaspoon Kosher salt
  • ½ teaspoon pepper
  • 1 pound red potatoes
  • 2 tablespoons olive oil
  • 1 pound broccoli florets
  • ½ pound baby carrots
  • 1 ½ pounds chicken tenders

Instructions
 

  • Put a large sheet pan in a 425 degree oven while cutting up the vegetables. 
  • Whisk the honey, dijon, ½ t. salt, pepper, and vinegar in a small bowl.
  • Place the rest of the ingredients in a large bowl including the remaining salt along with the honey mixture and toss to combine well. 
  • Spread in a single layer on the sheet pan. and roast until brown and the chicken and vegetables are done for about 30 minutes.
