Put a large sheet pan in a 425 degree oven while cutting up the vegetables.
Whisk the honey, dijon, ½ t. salt, pepper, and vinegar in a small bowl.
Place the rest of the ingredients in a large bowl including the remaining salt along with the honey mixture and toss to combine well.
Spread in a single layer on the sheet pan. and roast until brown and the chicken and vegetables are done for about 30 minutes.
