Amish Stuffed Green Pepper Soup
A perfect blend of flavors to greet the first cool autumn days.

- 1 pound ground beef, browned
- ¼ teaspoon salt
- ⅛ teaspoon pepper
- 2 tablespoons Parmesan cheese
- 1 pint tomato juice
- ⅔ cup rice, cooked
- ⅛ – ¼ cup brown sugar, or to taste
- 1 cup green peppers chopped
- 1 teaspoon smoked paprika optional
- 1 teaspoon onion powder optional
- 1 teaspoon garlic powder optional
Chop the peppers and set aside.
Brown the ground beef in a skillet over medium heat, drain, and set aside.
Cook the rice and set aside
.Combine rice, ground beef, peppers, and the rest of the ingredients in a large pot and cook over medium heat for about 20 minutes.
