Haitian Rice With Sauce

A traditional Haitian dish brought to the USA by Amish missionairies

Ingredients
  

Rice

  • 3 cups water
  • 1 1/ 2 cups rice
  • 2 tablespoons olive oil
  • 1 ½ teaspoons chicken base
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 1 cup cooked pinto or black beans (opt)

Sauce

  • 2 cups pizza sauce
  • 1 cup chicken broth
  • ¾ teaspoon garlic powder
  • ¾ teaspoon salt
  • ¾ teaspoon black pepper
  • ½ Tablespoon real lemon
  • ½ cup chicken, diced
  • ½ cup potatoes, diced
  • ½ cup carrots, sliced
  • ½ cup cabbage, chopped
  • ½ cup onions, chopped

Instructions
 

Rice

  • Pour water, oil, and seasoning into a medium-sized pan.
  • Bringto boil, add rice. Stir then simmer for ten minutes.
  • DO NOT stir while simmering.
  • Remove from heat, cover and let set another ten minutes.
  • Fluff with a spoon and add beans. Spoon onto your plate and ladle a generous serving of the following sauce on top. Very good!  

Sauce

  • Dump all together in a medium sized sauce pan.
  • Simmer until veggies are tender.
  • Pour over rice
