Amish Cheesy Double Chicken & Rice

Ingredients
  

  • 1 can cream of chicken soup
  • 1 ⅓ cups water
  • 3 /4 cups uncooked long grain rice
  • 1 /2 teaspoon onion powder
  • 2 cups frozen mixed vegetables
  • 1 1 /4 pounds boneless, skinless chicken breast
  • ½ cup shredded Cheddar cheese

Instructions
 

  • Preheat the oven to 375.
  • While the oven is heating, stir the soup,water,  rice, onion powder, and veggies in a bowl and then pour into an 11 X 8 baking dish.
  • Top the rice mixture with chicken.
  • Season with salt and pepper.
  • Cover the baking dish. 
  • Bake for 50 minutes or until the chicken isdone and the rice is nice and tender.  R
  • Remove from the oven and sprinkle with thecheese. Let stand for 10 minutes.
