Amish Cheesy Double Chicken & Rice
An amazingly hearty dish!

- 1 can cream of chicken soup
- 1 ⅓ cups water
- 3 /4 cups uncooked long grain rice
- 1 /2 teaspoon onion powder
- 2 cups frozen mixed vegetables
- 1 1 /4 pounds boneless, skinless chicken breast
- ½ cup shredded Cheddar cheese
Preheat the oven to 375.
While the oven is heating, stir the soup,water, rice, onion powder, and veggies in a bowl and then pour into an 11 X 8 baking dish.
Top the rice mixture with chicken.
Season with salt and pepper.
Cover the baking dish.
Bake for 50 minutes or until the chicken isdone and the rice is nice and tender. R
Remove from the oven and sprinkle with thecheese. Let stand for 10 minutes.
