The Amish Cook: Homemade Breakfast Sausage


  • 2 lb pork or 1 lb pork plus ¾ lb venison
  • ½ teaspoon ground mustard
  • 2 teaspoons salt
  • 1 ¼ teaspoon black pepper
  • ½ teaspoon ground sage
  • 1 tablespoon brown sugar
  • a pinch of red or cayenne pepper


  • Mix together and use as you would any sausage. This can also be mixed and frozen ahead of time for your convenience.
