Barbara Miller's Barbecue Burgers

Ingredients
  

  • FOR THE PATTIES:
  • 2 lbs ground beef
  • 2 teaspoon salt
  • fresh ground black pepper
  • 1 large egg beaten (I use free range eggs)
  • 1 medium onion chopped
  • 6 crackers broken
  • ½ cup skim milk
  • 1 teaspoon parsley
  • teaspoon oregano
  • teaspoon basil
  • FOR THE GRAVY
  • 3 cups water
  • 2 tablespoons flour
  • 1 cup water
  • Salt and pepper to taste
  • A pinch of oregano and basil

  • Soak the crackers in the skim milk and set aside. Drain off the milk just before you make the patties.
  • Combine all of the ingredients for the patties in a bowl. Then shape mixture into oblong shaped patties and brown slightly on each side in a non stick frying pan.
  • Save the drippings. and place them in a baking dish.
  • Make the gravy by adding 3 cups water to the beef drippings. Combine the 2 tablespoon of flour with water.
  • Bring to a boil, and add the flour mixture to boiling drippings in a thin stream.
  • Whisk quickly and constantly to prevent lumps.
  • Season with salt and pepper and the seasonings, and heat until the gravy is thickened.
  • Pour the gravy over the beef patties and bake at 400* for 30 minutes.
  • Serve with mashed potatoes and crusty bread for a real comfort food treat.
