Mennonite Summer Fruit Dessert

A delicious and refreshing summer treat!

Cake layer

  •   2   cups all purpose flour·
  •  2   teaspoon baking powder
  •  1   cup sugar·
  •  ⅛ teaspoon salt·
  •  ½ cup butter
  • 1   cup milk
  •    2 beaten eggs·
  • 2    teaspoon vanilla

Fruit layer

  • ·  fresh or frozen unsweetened fruit ofchoice-apples, peaches, ·  fresh or frozen unsweetened fruit ofchoice-apples, peaches, berries, apricots, plums, etc.berries, apricots, plums, etc.


  •  ¼    cup melted butter
  • ¾ cup all-purpose flour
  •   ¾ cup sugar



  •  Blend flour, baking powder, sugar, salt, andbutter in a large bowl.
  • Stir in milk, eggs, and vanilla.
  • Spread in a well greased jelly roll pan(17x11x1").

Fruit layer

  •  Cover with fruit of choice.

Topping and Baking

  • Combine topping ingredients until crumbly.  
  • Sprinkle over fruit and bake at 375 for30-35 minutes.
