Amish Zucchini-Carrot Casserole

Ingredients
  

  • 1 cup baking mix or Bisquick
  • 3 eggs
  • ½ cup vegetable oil
  • 1 cup shredded carrots
  • 1 cup shredded cheddar cheese
  • 3 cups shredded zucchini
  • 1 small onion, chopped
  • Salt and pepper to taste

Instructions
 

  •   Preheat the oven to 350.
     
  • In a large mixing bowl, combine all ingredients together.
  • put into an 8 x 8 baking pan, greased.
  • Bake at 350 for 35-45 minutes.
