Amish Sweet Potato Casserole
a delicious autumn tradition on Amish farms!

Batter
- 2 cups cooked and mashed sweet potatoe
- ⅓ cup butter
- ½ cup sugar
- ½ teas salt
- 2 eggs
- 1 teas vanilla
- 2 teaspoons all-purpose flour
Crumbs
- 1 cup chopped pecans
- ⅓ cup all purpose flour
- 2 tablespoons butter, melted
- ½ cup brown sugar
Mix sweet potatoes with softened butter, sweetener, and salt. Beat eggs with vanilla and flour and mix into sweet potato mixture. Pour into an 8 by 8 inch baking pan. Mix up all crumb ingredients and sprinkle on top. Bake at 350 for 35 minutes or until set. Enjoy!
