"Wow" Shredded Potato Salad

Shredding the potatoes is what gives this recipe its distinctive flavor. Feel free to halve the recipe, or halve again if this is too much!

Ingredients
  

  • 6 pounds of potatoes peeled and shredded
  • 2 stalks of celery, chopped fine
  • 1 small onion, chopped fine
  • 3 boiled eggs, shredded
  • 3 big sweet pickles, shredded

Dressing

  • 2 cups mayonnaise
  • ½ cup milk
  • ½ cup sweet pickle juice
  • ¾ teaspoon pepper
  • 1 tablespoon prepared mustard
  • 2 tablespoons sugar
  • 1 tablespoon salt

Instructions
 

  • Cook the shredded potatoes until tender.
  • Cool
  • Stir in celery, onion, eggs, and pickles in a big bowl.
  • In a separate large bowl mix all the dressing ingredients until completely combined.
  • Pour over the potatoes and mix until completely and evenly coated.
