"Wow" Shredded Potato Salad
Shredding the potatoes is what gives this recipe its distinctive flavor. Feel free to halve the recipe, or halve again if this is too much!

- 6 pounds of potatoes peeled and shredded
- 2 stalks of celery, chopped fine
- 1 small onion, chopped fine
- 3 boiled eggs, shredded
- 3 big sweet pickles, shredded
Dressing
- 2 cups mayonnaise
- ½ cup milk
- ½ cup sweet pickle juice
- ¾ teaspoon pepper
- 1 tablespoon prepared mustard
- 2 tablespoons sugar
- 1 tablespoon salt
Cook the shredded potatoes until tender.
Cool
Stir in celery, onion, eggs, and pickles in a big bowl.
In a separate large bowl mix all the dressing ingredients until completely combined.
Pour over the potatoes and mix until completely and evenly coated.
