Amish Zucchini Bread
a mouth-melting, delicious slice of summer no matter the time of year.

- 3 eggs
- 2 cups grated zucchini·
- 2 cups white sugar
- 1 cup vegetable oil
- 3 teaspoons vanilla extract
- 1 teaspoon baking soda
- ¼ teaspoon baking powder·
- 1 teaspoon salt·
- 3 teaspoons cinnamon
- 3 cups flour
Grease two bread-sized loaf pans
Preheat oven to 350
Grate zucchini
In a large bowl, mix all ingredients well.
Dived batter between two pans.
then bake for 1 hour or 1½ hours untiltoothpick comes out clean. Usually 1 hour.
