Mini Sugar Cookie Pumpkin Pies
This dessert is amazing mash-up of two traditions: sugar cookies and pumpkin pie!

Cookies
- ½ cup sugar, plus ⅛ cup sugar
- ¼ teaspoon baking soda
- 1 egg
- 1 teaspoon baking powder
- 6 tablespoons butter
- 1 teaspoon vanilla
- ½ cup lard or shortening
- 2 cups flour
- 3 oz (¼ cup plus ⅛ cup) milk
Filling
- 4 oz cream cheese
- ½ cup canned pumpkin
- ¼ cup sugar
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
Frosting
- 4 oz cream cheese
- ½ teaspoon vanilla
- 2 cups powdered sugar
Cookies
Preheat oven to 350 degrees.
Cream together the sugar, butter and lard.Add eggs and beat.
Mix soda and vanilla into milk.
Mix baking powder in with flour.
Add milk and flour alternately to creamed mixture.
Chill dough for approximately an hour (or overnight) before rolling ½” thick.
Reserve dough until you are done with the filling below and follow instructions.
Filling
Mix cream cheese until soft and smooth then add sugar and pumpkin and mix until well combined and lump free Line muffin pan with cupcake liners, and shape cookie dough into mini "pies". A
Add filling to center of pies and bake 13-15 minutes at 350 until cookies are lightly golden and filling is set.
