Amish Rhubarb Cake

A delicious way to enjoy rhubarb!

Ingredients
  

  • 1 ½ cups cups brown sugar
  • 2 cups flour
  • ½ cup shortening
  • 1 cup buttermilk
  • 1 egg
  • ½ teaspoon baking soda
  • 1 ½ cups fresh rhubarb
  • ½ teaspoon salt

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease a 9 x 13-inch baking pan; set aside
  • .Combine shortening, brown sugar, and egg; beat until light and fluffy.
  • Combine the flour, baking soda and salt together; add to the egg mixture alternately with the buttermilk, ending with flour.
  • Fold in the rhubarb and mix in well. Pour mixture into the prepared pan and bake at 350 degrees for 30 to 40 minutes until a wooden toothpick inserted in the center comes out clean.
  • Cool before cutting. Serve with whipped cream, if desired.
