Sour Cream Rhubarb Bars

Ingredients
  

Crumb Crust

  • 1 cup butter
  • 1 cup brown sugar
  • 2 cups flour
  • 2 cups quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Filling

  • 4 eggs yolks
  • 2 cups rhubarb. chopped fine
  • ½ cup brown sugar
  • 2 tablespoons clear-gel
  • ½ cup white sugar
  • 2 cups sour cream

Instructions
 

  • Boil filling for 5 minutes.
  • Pat 2 /3 of crumbs into the bottom of  9 X 13 inch pan.
  • Bake at 350 for 15 minutes. 
  • Remove from the oven and spread the filling over the baked crumbs. 
  • Then spread rest of the crumb topping on top and bake for an addition 20 minutes.
