Zucchini Egg Scramble
A delicious, amazing summery egg and zucchini scramble

- 2 or 3 small zucchinis (about 1 pound)
- 2 tablespoons butter
- 1 /2 cup shredded cheese
- 1 medium onion, chopped
- 1 pepper, chopped
- 6 to 8 eggs, beaten
In a skillet saute zucchini, onion, and pepper in butter until tender.
Season with salt and pepper.Add eggs, cook and stir until set.
Sprinkle with cheese.Remove from heat and cover until cheese melts.'
Sausage or other meats may be chopped and sautéed along with the zucchini
