Zucchini Egg Scramble

A delicious, amazing summery egg and zucchini scramble

Ingredients
  

  • 2 or 3 small zucchinis (about 1 pound)
  • 2 tablespoons butter
  • 1 /2 cup shredded cheese
  • 1 medium onion, chopped
  • 1 pepper, chopped
  • 6 to 8 eggs, beaten

Instructions
 

  • In a skillet saute zucchini, onion, and pepper in butter until tender.
  • Season with salt and pepper.Add eggs, cook and stir until set.
  • Sprinkle with cheese.Remove from heat and cover until cheese melts.'
  • Sausage or other meats may be chopped and sautéed along with the zucchini
