The Amish Cook’s Homemade Peanut Butter Cookies

I don’t have much to add here, the pictures speak for themselves.  This is a recipe I’ve made on several occasions and is one of the best pb cookie recipes I’ve tried, a nice, strong peanutty taste!   The photos show them in the oven at Lovina’s and then stacked up on the counter to cool.  YUM!  Try the recipe yourself:


1 cup shortening

1 cup white sugar

1 cup brown sugar

2 eggs

1 teaspoon vanilla

1 cup peanut butter

3 cups all-purpose flour

2 teaspoons soda

1 /2 teaspoon salt

DIRECTIONS: Preheat oven to 350 degrees. In a large mixing bowl, cream shortening, sugars, eggs, and vanilla until thoroughly mixed (editor’s note: while Amish cooks would not have an electric mixer, one can be used here on the lowest setting). Stir in peanut butter, flour, baking soda, and salt. The batter will be thick and should be stirred vigorously with a wooden spoon or kneaded with your hands until everything is thoroughly mixed. Drop by heaping tablespoons onto ungreased cookie sheets. Press the cookie dough with the back of a floured fork to make a criss-cross. Bake for 12 to 14 minutes or until brown on edges, but undone in center. Take out and leave on the cookie sheet for a few minutes before transferring to cooling rack.

    Haven’t made these yet. I did make the Monster Cookies. They didn’t last long. So I’m sure these pb cookies wouldn’t either.

    In Australia we do not use shortening, infact, I do not think I have even seen it in the supermarket. Is it possible to substitute the shortening for softened butter? I enjoy making cookies and would love to make these peanut butter ones, they look so delicious.

    • Zelka, welcome to you down under! Yes, you can use softened butter in place of shortening. Just don’t use vegemite:) Just kidding! Good luck with the cookies!

        Thank you for the reply Kevin. I shall try to make these this weekend, by which time all the Easter sweets will be gone and something new to try. I am impressed that you know of Vegemite!!! I am sure that someone somewhere has tried to combine Vegemite and peanut butter but not me, lol.
