    Amish Chicken With Easy Gravy

    Jump to Recipe

This is a recipe where the gravy makes itself as the chicken simmers and cooks in the ingredients around it.  This is a delicious and easy recipe that comes from Clara Miller, a Beachy Amish Mennonite cook, in Kansas.

The Amish presence in Kansas, by the way, has been really slow to grow over the years and that is somewhat surprising to me. You have arable soil, cheap land, and central location. But despite all of those attributes, the Sunflower State has been slow to attract a large Amish population.

Amish chicken with easy gravy is very typical of the Great Plains Amish cooking style: minimalist, no-frills, and flavorful.

My parents attempted Clara Miller's Amish chicken with easy gravy and really enjoyed the recipe for our minimalist cooks out there (and who isn't sometimes?) you'll like this.

What I like about recipes like these is you can experiment. For this one I'd tend to hew with the recipe, but you could try crushing crackers and coating in cracker crumbs to give it more of a crunch. Another trick you could try is using Rice Krispie coating, that would add a touch of crunch to the recipe.

The gravy is a basic one of whipping cream and a few other ingredients, very simple but flavorful

You could even experiment with the gravy. Hint of brown sugar or a touch of molasses to make sweeter are a few of the more common things in the Amish cook's bag of cooking tricks.

The gravy does thicken up a bit while cooking but my parents say it was on the thinner side.

Use farm fresh ingredients when making the Amish chicken with easy gravy. Most Amish cooks have home-raised chickens.

    a good supper!

If that had been me I would have slathered gravy all over that chicken, my parents have more self-discipline than I.

My parents baked the Amish Chicken With Easy Gravy in a glass dish, but you can bake it in a casserole, a roaster, or even a cast iron skillet put in the oven. I think the glass baking dish works well. Use parchment paper or spray with olive oil or some other cooking spray to cut down on mess. This chicken doesn't have much spice, so if you want to turn up the heat, add some cayenne pepper, black pepper, or crushed red pepper flakes. A dash of Worcestershire sauce in the gravy would also add a bit of flavor. But I like this recipe just the way it is!
