Amish Apple Blossom Cake

This is a tasty, moist cake that Gloria featured in her column back in August. Â But it going through my archive of unpublished photos I realized I had a picture of this beauty of a cake. Â This is a wonderfully moist, fragrant cake to enjoy as autumn transitions into winter and apple season begins to wane.
Amish Apple Blossom Cake

Serves: 1 cake
Ingredients
- 1 cup vegetable oil Coupons
- 1 1 /2 cups brown sugar
- 2 eggs (unbeaten)
- 1 teaspoon vanilla
- 1 1 /2 teaspoons soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 1 /4 cups flour
- 1 cup nuts (optional)
- 3 cup chopped apples
Instructions
- Cream first 3 ingredients until well mixed.
- Then add remaining ingredients in the order given.
- Top with 1/ 2 cup brown sugar, 2 teaspoons cinnamon, and 1 /2 cup nuts.
- Pour into 9 X 13 inch pan and bake at 350 for 20-25 minutes.
