    Penny's Perfect Fudge

    Fudge is a favorite among the Amish at holidays. Heck, fudge is a favorite among anyone at the holidays. But in Amish homes where holiday decor is seldom seen, the season's festive side often comes out in the form of colorful candies or decadent fudges. (actually, many people call fudge "candy", maybe because it is so rich). So here is some perfect fudge for the occasion.

    I love fudge, my only beef being that it is sometimes too rich (and for me to say that says something). I mean, I like desserts that you can eat multiple helpings of...like a pie or a fruit-filled cobbler, or cookies...yes, cookies I'll easily eat a bunch of those...but fudge? Usually one piece and I'm done.

    As far as making fudge, man, I just have memories of being a kid and Mom getting out the double boiler and it all just seemed way too complicated. What I like about this recipe from reader Penny is its simplicity. No double boiler (come to think of it, I haven't seen a double boiler in years, does anyone still use them?), just boil, stir, and set. Penny says for for different flavours- change the chips that are used but keeping the same 1 ½ cups measurement. Can also add chopped nuts & decorate with coloured sugar etc. Let's check out the recipe.

    🍬 Fudge Ingredients

    • ⅔ cup evaporated milk
    • 1-⅔ cups sugar
    • ½ teaspoon salt
    • 1 ½ cups marshmallows ( mini OR diced if using large size marshmallows)
    • 1-½ cups butterscotch chips
    • 1 teaspoon vanilla

    📋Fudge Instructions

    1. Butter 8 x 8 pan and set aside.
    2. Mix evaporated milk, sugar, and salt in a saucepan over medium heat.
    3. Bring to boil; cook for 5 minutes, stirring constantly.
    4. Remove from the heat.
    5. Add marshmallows, butterscotch chips, and vanilla. ( have this all ready to add quickly) Stir vigorously to make sure all the marshmallows melt.
    6. Pour into buttered pan.
    7. Place into fridge to cool, once cool cut in squares

    Ingredients

        If using mini marshmallows 1 1/2 cups.. if using large marshmallow cut into 6 pieces each marshmallow making 1 1/2 cups.

      I have made this recipe for years. The only problems I have lately is the chocolate chips or any of the chips do not melt all the way. I have boiled for 5 min so you know it is hot but they do not melt. I dont know what to do. Thought abought using cocoa powder.

        My trick to getting everything to melt is a pre-measure into a large measure cup the marshmallows then add the vanilla on top of that then the chocolate chips then when I dump into the boiled mixture the chips go in first directly to the hot liquid to help with melting, while stirring quickly.

        Use real chocolate chips only. I've done the same thing. Used the imitation.

        Make sure you are using real chocolate chips like Hershey’s etc. Great value chips from Walmart will not work.

      Good grief! Someone here needs to learn how to edit. Makes it hard to read when the punctuation is wrong. Or words are misspelled. this may be a great recipe but I'll never know because I can't finish the article due to the composition.
