This recipe came to me by way of an Amish woman in the Harmony, Minnesota community.  One word: YUM!

2 cups flour
4 T cocoa
2 tsp baking soda
1 cup granulated sugar
1 cup mayonnaise
1 cup cold black coffee
1 tsp vanilla

In large mixing bowl, sift dry ingredients. Cream n mayo gradually. Add coffee slowly while beating. Add vanilla last. Place in a greased 9 x 13 pan. Bake at 350 for 20 minutes. Turn the temperature down to 325 for the rest of the time, usually 5-10 more minutes. Toothpick inserted in the center should come out clean. Add frosting of your choice when the cake is cool.

  1. This looked so interesting that I made it this afternoon. I halved the recipe and it fit perfectly in an 8″ round cake pan. The batter looked very sparse, but it rose great. It must be the eggs in the mayonnaise that give it the leavening power. I frosted it and will serve it after dinner tonight. Thanks so much.
