I have a whole slate of random recipes next week that I think you’ll enjoy, complete with photos and context.
Today’s random Amish recipe comes from Buchanan County, Iowa and it’s one of those simple, scratch farm meals that are so plentiful in Amish kitchens.
Four cups of chicken doesn’t seem like a whole lot (to me), so you might want to tweak the numbers up a bit.
- 4 cups diced chicken
- 2 cups uncooked macaroni
- 1 1 /2 cups milk
- 2 eggs
- 1 /2 pound grated cheese
- 1 /2 chopped onion
- 1 can mushroom soup
- 1 can cream of chicken soup
- Mix all ingredients and store in baking dish in refrigerator overnight.
- Sprinkle with buttered crumbs and bake 1 hour at 350.
