    5 Amish Breakfast Casseroles For Christmas Morning

    Breakfast casserole recipes are a dime a dozen but really good ones are more rare.   This is more a matter of opinion but having tasted many through the years it seems like the secret to a good casserole is "balance."  You don't want one too heavy on meat, too heavy on egg, you want just the right blend of eggs, meat, spices, and sauce, here are some of our best ones from the Amish archives!

    AUTHENTIC AMISH BREAKFAST CASSEROLE

    This is very basic, but basic is good and this one is straight from an Amish cook's recipe box in her own hand. Click here.

    CLASSIC AMISH BREAKFAST CASSEROLE

    This is a comfort food classic that differs from the above by offering up just a little bit more in the way of spice/seasonings, more common among the New Order Amish. Click here for the recipe.

    BARN-RAISING BREAKFAST CASSEROLE

    This one adds some hearty twists and would probably be my pick for a Christmas morning casserole! Check this out here.

    SAUSAGE AND PANCAKE CASSEROLE

    Mmmm, mmmmm, mmmm...take that back, this might be my pick and you could easily do a vegetarian version with veggie links.  Click here.

    And this recipe comes to us from Lorene Yoder an Amish cook in Oklahoma, a little bit more involved, but interesting!

    BREAKFAST BURRITO CASSEROLE

    I've mentioned before an Amish affinity for meat "smokies"...curiously this recipe has them in the ingredients, but never says what to do with them in the instructions so either leave them out or experiment.  Either way, this recipe - because of those  and the soups - is quintessentially Amish.

    Breakfast casserole
    A delicious, basic Amish breakfast casserole is perfect for Christmas morning!

    🥘 Breakfast Casserole Ingredients

    • 16 ounces cream cheese
    • 2 cans cream of mushroom soup
    • 1 can cream of chicken soup
    • 1 cup sour cream
    • four tortilla shells
    • 1 package of little smokies
    • 1 pound sausage, browned
    • 1 1 /2 pound shredded cheese
    • 1 dozen scrambled eggs
    • 1 1 /2 cups cooked, shredded potatoes

    📋 Breakfast Casserole Instructions

    1. Brown sausage with onion.
    2. Mix sour cream and soup together, putting a layer on the bottom of the dish.
    3. Cover with a layer of tortilla shells.
    4. Put eggs, potatoes, meat and half of cheese in layers on top of shells.
    5. Add another layer of soup, then more shells.
    6. Top with rest of cheese.
    7. Bake at 350 for 40-60 minutes.

    Ingredients
      

    • 16 oz cream cheese

      I was kind of surorised they didn't do a baked oatmeal recipe. With rolled ats, milk, eggs, fruit, nuts, spices it's amazing! And you can make a huge amonut!

        Nancy, thanks for the comment....Baked Oatmeal is quite popular among the Amish, maybe not so much as a Christmas morning recipe, but popular other times!
