    5 Amish Farmhouse Skillet Recipes

    Amish Skillet Spaghetti
    Amish Skillet Spaghetti Makes for a filling, delicious supper!

    Ah, the lowly skillet.  It's a rather unglamorous kitchen utensil, but it's also a must-have for Amish Farmhouse Skillet Recipes like this. I think anyone who moves out into their first apartment comes with at least a skillet.  Among the Amish, cast iron used to be king.  But as time went by stainless steel grew in popularity (there were some really persuasive peddlers of pots and pans that made inroads among the Amish some 30 - 40 years ago).  But lately cast iron has begun, again, gaining favor among the Amish.  

    I'm not a fan of Teflon in skillets. I did a story a couple of years ago about Teflon and the process for making it and it really wreaked environmental havoc in parts of the Ohio Valley near the DuPont chemical plant where it was manufactured. A lot of health issues from prolonged exposure.

    No, for me, a good cast-iron skillet is the way to go.

    So in tribute to this ubiquitous kitchen item, here are some Amish Farmhouse skillet recipes from Amish homes that could become favorites in yours:

    🍳Amish Skillet Casserole

    • 1 pound lean ground beef
    • 1 large onion, diced
    • fresh potatoes, peeled and diced
    • sliced fresh carrots
    • 1 can cream of mushroom soup
    • additional liquid as needed (water or milk, milk makes a richer casserole)
    • Soft cheese (cheddar or Colby in slices or shredded)

    📋 Instructions

    1. Brown hamburger in a large heavy skillet with a tight-fitting lid.
    2. Drain the meat well and top with onions, potatoes, and carrots.
    3. Put mushroom soup over all, then top with a soft cheese.
    4. Cover and simmer for 45 minutes.
    5. Check occasionally adding water or milk as needed.
    6. Serve hot.

    🍗 Extra Crispy Pan-Fried Skillet Chicken

    • 1 1 /4 cups whole-wheat flour
    • 1 1 /4 cups white flour
    • 1 cup cornmeal
    • 1 teaspoon thyme
    • 1 teaspoon black pepper
    • 1 tablespoon poultry seasoning
    • 1 teaspoon salt
    • 2 cups of milk (for dipping)

    This is a wonderful way to fix fried chicken.

    Optional Brine:

    • 2 quarts water
    • ½ cup salt
    • ½ cup sugar

    📋 Instructions

    1. Marinate chicken pieces in favorite brine for chicken overnight if you wish (see below).
    2. Drain and dip chicken pieces in flour mix.
    3. Then dip in milk, then in flour mix again.
    4. Fry in deep skillet in hot oil or shortening until done (25 - 30 minutes).
    Old-Fashioned Cheeseburger Casserole
    Cheeseburger casserole

    🍔 Skillet Cheeseburger Casserole

    • 1 pound hamburger
    • 1 /2 cup onion
    • 2 /3 cup ketchup or pizza sauce
    • 2 tablespoons mustard
    • 1 teaspoon salt
    • ¼ teaspoon pepper
    • 1 cup uncooked rice
    • shredded cheese

    📋 Instructions

    1. Cook rice until tender.
    2. In a skillet brown beef and onion.
    3. Add ketchup, mustard, salt and pepper.
    4. Mix well.
    5. Stir in rice and simmer.
    6. Top with cheese and let stand 5 minutes.

    🍝 Skillet Spaghetti

    • 1 pound hamburger
    • 2 medium onions, chopped
    • 2 cups broken spaghetti
    • 1 28 ounce can diced tomatoes, undrained
    • 3 /4 cup chopped green peppers
    • 1 /2 cup water
    • 1 8 ounce can sliced and drained mushrooms
    • 1 teaspoon chili powder
    • 1 teaspoon dried oregano
    • 1 teaspoons sugar
    • 1 teaspoon salt
    • 1 /4 cup brown sugar
    • 1 cup shredded Cheddar cheese

    📋 Instructions

    1. In large skillet brown hamburger, onions, and drain.
    2. Stir in all other ingredients except for the cheese and bring to a boil.
    3. Reduce heat, cover and simmer for 30 minutes or until spaghetti is tender.
    4. Sprinkle with cheese, cover, and heat until melted.

    🍳 Amish Egg-in-Nest

    • 1 egg
    • 1 slice of bread
    • butter
    • salt
    • pepper

    📋Instructions

    1. Butter a skillet and bread.
    2. Turn heat on medium
    3. Cut a hole out of the center of the bread.
    4. Crack an egg into the hole.
    5. Fry on each side 2 - 3 minutes.
    6. The "hole" can be fried and butter or seated separately with jelly and butter.
