As winter settles in cookies become a staple in many Amish kitchens. Â Nothing to beat back the winter blahs than a rich, delicious cookie for the kids. Â And kids can help make the cookies too, which keeps them busy, which keeps the parents from going bonkers. Â Yes, even the Amish get cabin fever. Actually, the Amish get it worse because they are, by nature, an outdoorsy people accustomed to long hours spent in nature.
Marshmallows and chocolate are readily available at most Amish bulk food stores so these are the perfect sweet treat for many Amish cooks to brighten a winter's day. Â Most Amish homemakers keep a supply of marshmallows on hand for hot cocoa in the winter or some campfire fun during the summer.
This is one I have seen in Amish homes before around the holidays and it is definitely worth.
- 1 cup shortening
- 2 cups sugar
- 2 eggs
- 2 tsp. vanilla
- 4 cups flour
- 1 tsp. baking soda
- 1 tsp. salt
- ⅔ cup cocoa powder
- 1 cup thick sour milk
- 36 big marshmallows, cut in half
- FROSTING
- 6 Tbsp. butter or margarine, melted
- ¼ cup cocoa powder
- 1 tsp. vanilla
- 3½ cups powdered sugar
- 5-6 Tbsp. milk
- In a medium bowl, stir together the flour, baking soda, salt and cocoa powder.
- Set aside.
- Beat together the shortening, sugar, eggs and vanilla until fluffy.
- Add flour mixture alternately with the sour milk.
- Drop batter by spoonful onto greased baking sheet. Bake at 350 degrees F
- FROSTING
- Combine all ingredients and beat together until smooth.
- Once cookies are cooled, spread over tops covering marshmallows.
- **sour milk: Place 1 Tbsp. lemon juice or vinegar in measuring cup. Fill with milk to make one cup. Let sit at room temperature for 15 minutes. Should be thick and lumpy.**

Chocolate Marshmellow cookies, When do you use the marshmellows. I assume you put them on top after they come out of the oven. Some say put them on before baking. Please reply about the marshmellows. Thanks

I was wondering the same thing....the marshmallow looks like it has been incorporated into the cookie so I wonder if you push it into the cookie as soon as it comes out of the oven....????

A recipe on Pinterest says to put the marshmallows on the hot cookie and put back into the oven for 2 minutes.

I would say cut large marshmallows in half and put on top of cookies and then put the chocolate icing on top of the marshmallow.....
