Hot taco salad and Amish cooking, doesn't seem like they should go together, does it?
Many aspects, though, of south-of-the-border cooking are quite compatible with Amish culinary culture. Old Order Mennonites and some Amish do have a presence in central America, so spices and recipes will be adopted down there and brought back to family up north.
There is a New Order Amish presence in Belize and a couple of South American countries. The Mennonite presence is strong in Mexico, Belize and some other Latin American countries. The Old Order Amish attempted to start a church community in Honduras in the 1960s, it lasted about six or seven years before fading out. Someday I would like to visit what remains of the community, some farm houses and buildings from that bold experiment are still there.
Plus, most of the building blocks of basic south-of-the-border food are embraced by the Amish anyway: ground beef, lettuce, sour cream, these are all common food finds among the Amish. So something like this hot taco salad is very compatible with Amish cooking and it’s become a big part of the menu.
See, many of the ingredients for this salad, pictured above, like tomatoes, sour cream, onion, lettuce, and the like are already found in Amish kitchens. It's really just the tortilla chips and salsa which give this a Tex-Mex flair.
This is the part where you brown hamburger, and then add salt, pork and beans, cheese, hot sauce, salsa, and mayo. How much hot sauce you want, well, you can adjust to your taste or leave it out altogether if you are not a "spice" person.
Delicious once everything melts and melds together.
Yeah, this type of salad is a hearty meal in itself. So good.
