    The Amish and Cornflakes - 3 Recipes With Cornflakes - Corn Flake Candy and Cookies

    The Amish like their cornflakes. A lot.

    The other night I was at a restaurant in Cincinnati (more about this place soon) and on the dessert menu were cornflake cookies.  That got me thinking about some of the cornflake cookie recipes I've seen in Amish cookbooks and in Amish communities.   Judging by how much I see cornflakes when I visit Amish communities I think it is safe to say that the Amish like their cornflakes.  Amazing how cornflakes can help crunch up a cookie. Take a look at this amazing cookie!

    Mmmmm, amazing cornflake cookie!

     

    AMISH CRISPY CHEWS CORNFLAKE COOKIES
    1 ½ cup white sugar
    2 cups brown sugar
    2 cups vegetable oil
    4 egg
    2 teaspoons vanilla
    2 teaspoons salt
    2 teaspoons soda
    1 ½ cups oatmeal
    4 cups cornflakes or frosted flakes cereal
    4 cups flour

     Combine sugars, oil, eggs, and vanilla. Add remaining ingredients. Roll into 1 ¼-inch balls and place on greased baking sheet. Flatten slightly. Bake at 350 for 10 minutes. Makes 5 dozen.
    AMISH CORNFLAKE CANDY
    ½ cup peanut butter
    12 oz. butterscotch chips
    5 cups corn flakes
    Melt peanut butter and butterscotch chips in top of double boiler. Crush corn flakes just a little, then put into greased bowl. Pour melted mixture over top and mix. Dip out in small clusters onto waxed paper and let cool.
    DAVIESS COUNTY INDIANA ONE-PAN AMISH CORNFLAKE CANDY
    • 1 cup sugar
    • 1 cup light corn syrup
    • 1¼ cups peanut butter
    • 6 cups corn flakes
    • 1 cup homegrown peanuts
    Combine sugar and corn syrup in a dutch oven.
    1. Bring to a boil.
    2. Remove from heat.
    3. Stir in peanut butter.
    4. Add corn flakes and peanuts and stir until all are coated with syrup mixture.
    5. Spread the mix out into a 13 x 9 dish and cut into squares.
    6. Let set before cutting.
