    Amish Easter Brunch Farmers Casserole

    The Amish celebrate Easter in varied ways. While sightings of the Easter Bunny are rare, delicious dishes on the day are not.

    Easter Brunch Casserole

    A hearty morning meal is common on Easter Sunday to celebrate the day.  Especially if Easter falls on a "non church Sunday."

    A big casserole like this Amish Easter Brunch Farmers Casserole from an Amish woman in Ohio is quite common and has a delicious taste.  Keep in mind an Amish cook making this is going to probably use eggs from her hens, homemade mozzarella, home-grown veggies, so there is a freshness factor to their casseroles that may be difficult to replicate in a "suburban kitchen."  But this is still a great recipe!

    Amish Easter Brunch Casserole Ingredients

    This has flavorful, easy ingredients!

    I love all the fresh veggies in this! Make sure you have a big enough pan.

    Ham is my favorite meat to go with this Amish Easter Brunch Farmers Casserole, but you could experiment with pork like bacon or sausage or other meats like ground beef, chicken. Flavors like garlic and other spices could be added. Cheddar and Mozzarella are the cheeses in this casserole, but Parmesan cheese is another that would go well. Variations of this recipe also call for potatoes. Instead of milk, you could add some heavy cream for a richer taste.

    You could add a Tex-Mex twist to this casserole by adding beans, tomatoes, and corn to it. But my family loves this casserole just as the recipe is shown below. It is one of my favorite recipes for a breakfast bake! You may definitely want to consider adding this to your Easter morning menu. Leftovers can be stored in an airtight container or sealed with plastic wrap for several days in your refrigerator.

    🍳 Brunch Ingredients

    2 cups shredded Cheddar cheese

    2 cups shredded Mozzarella cheese

    2 tablespoons butter

    1 can of sliced mushrooms, drained

    ⅓  cup sliced green onions

    ½ cup chopped red bell peppers

    2 cups diced fully cooked ham

    8 farm fresh eggs

    1 3 /4 cups milk

    1 /2 cup all-purpose flour

    1/ 2 teaspoon dried basil

    1 /2 teaspoon salt

    1 /4 teaspoon ground pepper

    📋 Brunch Instructions

    1. Preheat oven to 350 degrees F
    2. Combine Cheddar and mozzarella cheese in a small bowl; place 3 cups cheese mixture into a 9x13-inch baking dish.
    3. Melt butter in a large skillet over medium heat; cook and stir mushrooms, onions, and red pepper until vegetables are tender, about 5 minutes; drain.
    4. Spread vegetables over cheese mixture.
    5. Top mushroom mixture with ham; sprinkle with remaining 1 cup cheese mixture.
    6. Beat eggs in a bowl; mix in milk, flour, parsley, basil, salt, and pepper.
    7. Slowly pour egg mixture into baking dish.
    8. Bake in preheated oven until a knife inserted near the center comes out clean, 35 to 40 minutes. Let stand 10 minutes before cutting.
