This is an example of a "cast off" recipe, one that didn't make the cut for any of our other cookbooks, yet is still too quirky not to share. The Amish Recipe Project is full of such recipes (Broccoli Ramen Casserole, anyone?) and some old favorites too, like Amish coffeecake.
SAUSAGE COTTAGE CHEESE CASSEROLE
1 pound pork sausage
1 onion; chopped
1 Bell pepper; chopped
6 - 12 eggs; lightly beaten
4 cups frozen shredded hash browns; thawed
2 cupsCheddar cheese; shredded
1 ½ cups small curd cottage cheese
1 ¼ cups Swiss Cheese; shredded
In a large frying pan, brown sausage with onion and pepper, stirring to crumble sausage. Drain. In a large bowl, mix all remaining ingredients (except salsa), and stir in sausage mixture. Transfer to a greased 13x9" baking dish. May sprinkle extra cheddar cheese on top. Bake at 350 for 35-40 minutes. Delicious served with a spoonful of salsa.
