This Amish super seven-layer salad recipe is popular and a staple at church gatherings and potlucks. I've always enjoyed them with their hearty layers of peas, lettuce, cheese.

There are so many versions of this popular salad. Man, looking at this photo makes me miss my grandmother...just seeing her handwriting is like seeing her. I notice her version has celery in it and specifies Colby cheese, which are both different from the Amish recipe below. So, you know, feel free to tweak.
Not sure what year my grandmother wrote the above recipe in, but looks like it was written, guessing by the yellowing paper and her handwriting, maybe 40 years ago. Possibly longer. If you can decipher the recipe on the paper and want to make it, let me know how it turned out Otherwise, you can try the Amish seven-layer salad recipe below that comes from an Amish woman in Kentucky. The recipes are, as you'd expect, quite similar.
I remember my grandmother making this recipe. It's easy to assemble, with the ingredients available either fresh from your garden or your supermarket's freezer. Even some Amish with freezers will cut corners and use frozen peas in this. This dish is often hastily assembled for a funeral gathering or quick picnic so having frozen veggies is a good way to cut corners.
I think, as salads go, this is pretty good "comfort food." The layers allow you to sample a bunch of tastes and textures in a single bit and the bacon adds some good flavor and crunch, so have fun with this one. It's especially popular at summer picnics.

Use fresh or frozen peas.
Fry some bacon!

Yes, just prepare the veggie bacon as usual and swap it out with the real bacon. The vast majority of Amish would not use veggie bacon, but no reason you can't!

I made the 7 layer salad, let sit in refrigerator overnight, next day lettuce was completely wilted, was very disappointed.
