I used to read the Amish newspaper “The Budget” fairly regularly but I don’t as much anymore. There used to be a cooking column (recipe column) in the Budget called “Cookin’ with Maudie.” As far as I know, the paper never explained who Maudie was. Could be a name. Could also be a variation on the Pennsylvania Dutch word “maud”, which is like maid or housekeeper.
I was doing some cleaning out of some old boxes today and I came across my copy of Cookin with Maudie. Not sure how I came to own this copy, but it was one of my first Amish cookboos. It’s packed with recipes.
There are 196 pages filled with delicious recipes such as Italian Vegetable Casserole, Raw Apple Cake, Molasses Cookies, Best Oven Hash, Lemon Seasoned Steak, and Lemon-Herb Turkey Drums. Contributors are shown with the recipes, but there is not an alphabetized, consolidated list of contributors.
The Maudie column was generally filled with contributed recipes from readers and the cookbook is like that also. There are a few used copies available on Amazon.
Cookin' with Maudie, one of the first Amish cookbooks I ever had...cover is splattered and old, but the inside is full of amazing recipes.
- 1 pound hamburger, browned and finely chopped
- 2 tablespoons mustard
- 3 / 4 cup ketchup
- seasonings to taste
- cheese slice
- sandwich bun halves
- butter
- Place bun halves (or bread slices) on cookie sheets and spread with butter. Combine hamburger with mustard, ketchup, and seasonings and spread evenly oven the buns. Bake in 450 degree oven for 15 minutes. Top with cheese slices and return to oven.
- 1 pound ground beef
- 1 teaspoon salt
- 1 /2 teaspoon pepper
- 1 tablespoon minced onion
- 1 /2 cup milk
- 1 cup Wheaties cereal
- Mix all ingredients.
- Place in lightly greased, shallow pan.
- Pat mixture into the shape of a t-bone steak.
- Broil for 5 minutes (3 - 4 inches from heat)
- Turn and broil 5 minutes more.
- 1 cup grated zucchini
- 1 teaspoon baking soda
- 1 cup sugar
- ½ cup butter
- 1 egg, beaten
- 2 cups flour
- 1 teaspoon cinnamon
- ½ teaspoon salt
- 1 /2 teaspoon cloves
- 1 cup chopped nuts
- 1 cup raisins
- Sift flour, baking soda, sugar, butter, and eggs. Sift flour, cinnamon, coves,a nd salt and stir to blend. Stir in raisins and nuts and drop by teaspoon on greased cookie sheet. Bake at 375 until lightly browned.
