    Homemade Pizza Pockets

     Ah, Hot Pockets....they've become a culinary cultural icon - for better or worse.  You can microwave them in their crisping sleeve and then spend the next 20 minutes waiting for the filling to cool down so it doesn't burn you, or worse, gush onto your shirt.  But what about homemade pizza pockets? That is really what these homemade pizza pockets are.  Pizza fillings baked into a seasoned, delicious lump of crust.  Amazing.  So while, yes, buying Hot Pockets at the supermarket is far easier, the deliciousness of the homemade version far outweighs anything else.

    Gloria, The Amish Cook columnist, first wrote about these homemade pizza pockets back in 2014.  Here is how she described them

    This week I’d like to introduce you to a recipe I recently used for my family for the first time. Daniel and Julia were both quite impressed with it and it certainly proved to be easier to make that I thought it would be. This is without a doubt the first of many batches of these I will make.
    Have you ever had homemade pizza pockets? Try them out. I’m sure you’ll like them. They freeze very well and can be thawed and heated for quick meals. They’re especially handy for anyone who packs their lunches.

    She goes on to write that If you happen to have a fry pie press you may want to use it. If not, you can do it the old-fashioned way which is just rolling out the dough and using a round container to cut circles then divide your toppings evenly on each one. Fold in half and pinch them shut with your fingers. The yield varies on how large you choose to make them.  

    Fry sausage and add pizza sauce

    This is the sausage being fried and the pizza sauce added. You don't have to use sausage, feel free to use ground beef, ground ham, or just make a meatless version.

    Roll the pocket dough thin

    Roll the pocket dough thin and make it whatever size you like.

    Fillings

    For me, selecting the fillings is the fun part, you can let your imagination run wild: cheese, pepperoni, onion, mushrooms, pineapple, and on and on!

    Load up the pockets before sealing them shut.

    Homemade Pizza Pockets

    Coat outside with butter or oil and sprinkle with your favorite seasonings.

    Your homemade pizza pockets will come out crisp and delicious!

    Homemade Pizza Pockets

    These are so good, and you can make a bunch ahead and freeze them. So take time today to save time tomorrow, I like that. They pack well in lunches.

    🍕 Homemade Pizza Pockets

    • 2 tablespoons yeast
    • 1 /2 cup warm water
    • 3 /4 cup warm evaporated milk
    • 1 /4 cup oil
    • 1 egg
    • 1 /4 cup sugar
    • 1 teaspoon salt
    • 3 to 4 cups flour
    • 1 pound sausage
    • 1 cup pizza sauce
    • Pepperoni
    • Shredded cheese
    • Onions
    • Peppers
    • Mushrooms

    📋 Instructions

    1. Fry sausage and add pizza sauce.
    2. POCKET: Dissolve yeast in water. Add the rest of ingredients adding flour last and let rise once, till double. Then roll dough thin. Let rise again about 10 minutes.
    3. FILLING: Fry sausage and add pizza sauce. Layer ingredients as you like on dough circles.. Fold in half and press shut. Bake at 350 until golden brown.

    Ingredients

    • 1 /4 cup oil
    • 1 egg

    • 1 teaspoon salt
    • 3 to 4 cups flour
    • 1 pound sausage
    • 1 cup pizza sauce
    • Pepperoni, Shredded cheese, Onions,Peppers,Mushrooms, olives or any other filling of your choice!

    Instructions
     

    • Fry sausage and add pizza sauce

    POCKET

    • Dissolve yeast in water.
    • Add the rest of ingredients adding flour last and let rise once, till double.
    • Then roll dough thin. Let rise again about 10 minutes.

    FILLING

    • Fry sausage and add pizza sauce.
    • Layer ingredients as you like on dough circles..
    • Fold in half and press shut.
    • Bake at 350 until golden brown.

    Notes

    You can swap out sausage and replace it with ground beef or even ground turkey.  And feel free to add whatever fillings you like: pineapple corn, red peppers, and so on.  You can cut out larger circles for larger pockets or make them smaller "kid-sized."
