    Amish Creamy Vegetable Soup

    We often think of simmering soups on, say, a crisp autumn evening or for a cold winter's day supper. And that’s true. There’s nothing better than a thick chowder or stew on a cold winter's day. Absolutely. The warmth of the woodstove radiating through the house from a simmering soup is standard in an Amish kitchen in winter.

    Still, there are many soups that pair well with summer, especially on an Amish farm. Gardens are cranking out plenty of fresh veggies, and Amish cooks need a way to use those veggies. A soup is a simple and easy way to enjoy them.

    A typical vegetable soup is tomato-based, but there’s not a hint of tomato in this Creamy Amish Vegetable Soup recipe. Still, you can load it up with fresh onions, garlic, homegrown cauliflower, broccoli, homegrown potatoes, and more.

    Of course, you can slice some carrots in there if you wish. Throw some peas in for good measure. This is the “base recipe" that an Amish woman gave me years and years ago. It’s a simple soup, very flavorful. But what I like about soups like this is that you can doctor them up according to your taste. Oh, you know, I'd probably throw some corn in too. That would be amazing this time of year. What about adding some meat? I mean, I guess you could add some chicken or hamburger to it. I've not tried it that way, but if you must meat, yeah, try it. But if you want to just stick with the recipe below that is fine too!

    Amish Creamy Vegetable Soup

    This soup is a whole lot easier to make if you just prepare all the veggies ahead of time and place them out for easy use. The most difficult part of this recipe is, as always, chopping and dicing all the veggies. For speed's sake you can cut the potato chunks larger (they'll be fork tender in the soup and can easily be cut then). So, yeah, just make it as easy for yourself as possible to make, because it's a very easy soup to eat!

    Oh, and by the way, you can use store-bought chicken broth. I mean, the recipe says to use homemade, but you can easily cheat and use bought kind.

    🍲 Creamy Amish Vegetable Soup

    • 1 T. vegetable oil
    • 2 medium yellow onions (chopped)
    • 3 cloves garlic
    • 5 c. homemade chicken broth
    • 2 t. Worcestershire sauce
    • 4 T. flour
    • 1 medium head cauliflower (chopped)
    • 1 medium bunch broccoli (chopped)
    • 3 medium potatoes (diced)
    • 2 c. heavy cream
    • 2 c. grated extra sharp cheese
    • Salt and pepper to taste

    📋 Instructions

    1. In a large pot, heat the oil and add the onions and cook for five minutes.
    2. Add the garlic and cook for one minute.
    3. Add the chicken stock, Worcestershire sauce and vegetables and simmer gently for approximately 20 minutes or until vegetables are tender.
    4. Stir flour with a little soup broth and add mixture along with the cream to the broth, stirring through.
    5. Add cheese a little at a time, stirring until completely melted. Enjoy with thick sliced bread.

    Ingredients

      Love vegetable soup, in fact I have some simmering on the stove right now but never thought of creamy. Nice twist!
