    Easy Amish Cornbread Salad

    Salads are popular in Amish kitchens during the summer.  But they don’t always involve lettuce.  or spinach.  This is a cornbread salad and is quite popular in Amish kitchens. There aren't many salad ingredients in this dish popular at the church or neighborhood potluck.

    Pick Your Cornbread!

    The recipe is pretty simple. You can make it super simple by buying cornbread, I suppose. Or you can make your own from scratch or just buy a box of Jiffy mix and be done with it.  We have some great simple recipes on this website for cornbread. You can use whatever kind of cornbread you prefer. Some people like a dry, crumbly cornbread, others like a more buttery bread. The only time I like dry crumbly cornbread is if I bathe it with butter.

    By the way, as a total aside, there used to be a restaurant in Cincinnati called Burbanks and they served the BEST cornbread. Man, it was melt-in-your-mouth good. So, yeah, procure the best cornbread you can for this Easy Amish Cornbread Salad!


    This particular recipe called for a green pepper but we didn’t have any, so I used to red. I regret using the red now, because I think it would look better with green. But it tasted super

    This type of dish is one that would be popular to take to a potluck, picnic, or after-church carry-in supper. It feeds a large amount of people and is a definite crowd pleaser.

    Easy Amish Cornbread Salad

    Use your favorite cornbread recipe and some ripe, large tomatoes. You can whip up this salad in 20-25 minutes tops.

    Red peppers or green can be used. The green might add more color variety, but tasted great with red also!

    Fresh bacon and home-baked cornbread make this salad sing! Nothing like delicious bacon crumbles!

    This Easy Amish Cornbread Salad is a colorful and filling salad. There are many variations of this dish and if you go to any southern state, it is a staple at gatherings. There are different versions in Tennessee, and different formulations in Georgia, Kentucky, and South Carolina. But the Amish have also adopted this popular salad.

    Lots of Variations!

    As it stands now, it only has six basic ingredients, but you could tweak it with some of the following ingredients:. You could crumble some cheese into it. Cheddar cheese would probably work best. Add some whole kernel corn (maybe a cup corn) or english peas, chop up a bell pepper or perhaps add some pinto beans (yay, fiber!). Chop in some green onions or a red onion. Scallions? Sure! A jalapeno would also add some zip. Some people like to chop up some ham and put in this salad, but if you are eating it for Thanksgiving I think it works best meatless, except for the bacon.

    You could stir in some sour cream or even buttermilk to mix in with the mayonnaise mixture, that adds a bit of zip to it. A dash of oregano or cumin would also be a nice match with the ingredients in this salad. Some people like to experiment by blending in ranch mix or miracle whip. I have not tried it with ranch dressing mix but it would probably be good. This salad is so easy, you don't need to bake it and you can serve in a small bowl, square pan, or whatever you have handy!

    This cornbread salad could be enjoyed as a side or as the main course of a meal. It's got a lot of substance to it!

    Easy Amish Cornbread Salad

    Make sure you use nice, thick slices bacon, but drain on a paper towel so that the bacon grease doesn't get into the salad. I like the bacon in larger pieces, but if you like small pieces you can crumble it fine. If you are watching calories, you could use some turkey bacon instead. This is a very colorful salad that makes a beautiful presentation. And storage is easy, just put into a sealable tupperware container or some other airtight container and refrigerate when done.

    • 10 cups crumbled cornbread
    • 8 bacon strips, cooked and crumbled
    • 2 medium fresh tomatoes, chopped
    • 1 medium green pepper chopped
    • Half cup chopped onion
    • 1 1 /3 cup mayonnaise

    📋 Salad Instructions

    1. Get out a large bowl. 
    2. Make the cornbread according to instructions and then cut into bite-sized squares. 
    3. If you bought the cornbread, cut into squares. 
    4. Combine cornbread, bacon, tomatoes, green peppers, and onion. 
    5. Add mayo and toss to coat. 
    6. Best if served immediately.

      Oh Lovina, if I only knew where you were I'd buy eggs from you. I'm on the east side of Michigan. I am sorry to hear of two funerals for your family to attend. we went to a visitation of a friend's mother who passed away last Sunday.

      I never would have though of putting cornbread into a salad. Good idea! I think I'd like a little cheddar cheese tossed on top of this - but then I like a little cheese on just about everything.

      This salad sounds odd to me. Perhaps if there were some lettuce added,it would be better. Of course,this is soley my opinion..I usually love Lovina's recipes!!

      This cornbread salad does sound good. But what kind of cornbread did you use? The photos look like a Texas Toast, rather than cornbread. I have never had cornbread of any kind that sliced and cubed up like your pictures show.

        It's just a "poofier" cornbread, you can use any kind, though!
