This is an awesome recipe, probably my single favorite "Amish bar." Â Amish homemakers will craft these bars out of homegrown (well, you don't grow it technically) honey from their own hives. So these bars will reflect hints of the region the honey comes from.
So, give these a try!
Homemade Honey Bars

Serves: serves 6-8
Ingredients
- 1 c granulated sugar
- 2 c all-purpose flour
- 1 teaspoon baking soda
- 1¼ teaspoon ground cinnamon
- 1 lg egg, lightly beaten
- ¾ c vegetable oil
- ¼ c honey
- 1 c walnuts, chopped
- 1 c powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon water
- 2 tablespoon mayonnaise
Instructions
- PREHEAT the oven to 350°F.
- STIR the sugar, flour, baking soda, and cinnamon in a large bowl until evenly mixed. Then add in the egg, vegetable oil, honey, and nuts. Stir until the mixture is smooth. Spoon into an ungreased jelly-roll pan or a 9 by 13-inch pan. Bake until a toothpick inserted in the center comes out clean, about 20 minutes.
- TO MAKE THE GLAZE: In a small bowl, stir together the powdered sugar, vanilla, water, and mayonnaise until smooth and creamy. Spread onto the honey bars while they are still warm.
- STORE the bars in a sealed container or cake safe. These will stay fresh for 3 to 4 days.

I think this sounds like I would thoroughly enjoy these. My main reluctance to make them is not the mayonnaise, but the large amount of oil and fat in the nuts. That is a lot of fat content. I am not a health nut, but I do try to limit an overindulgence in fats.

Kevin, I loved your piece about Maine and the National Parks. I just finished reading a mystery series about a Game Warden. The book Massacre Pond was about a National Park opportunity and the haters and lovers. I assumed it was all fiction but you know how the say the names have changed. I loved the videos at the end of your piece. My brother lives in New Mexico I am in Indiana, I have been going out there the last six years and we go to National Parks. I cannot believe that the Congress wants to rape and spoil these lands. I hope sanity rules. Also, as to yesterday I rode the railroad from Fairbanks to past Anchorage it was wonderful. They let us hang out the side and take pictures. A traveler said it was much cleaner and nicer than Amtrak. I also got to ride from Waterloo IN to Santa Fe NM on Amtrak. We slept in our seats. No complaints on Amtrak. I am nearly 73, at 6 and 9 I rode in style on the trains in a compartment and ate in the dining car. My Grandpa paid. One trip was from Marion IN to Washington DC and the other was to Boston. We got around by grey hound buses and paddlewheel boats down the Potomac. When we went to Niagara Falls I got Marilyn Monroe's autograph. Quite a trip.

I don't have walnuts, I was wondering if I could use sweetened, flaked coconut instead of the nuts in this recipe. I made them for the first time yesterday and gave some to my boyfriend, and he loved them! I have found my favorite recipe for brownies/bars. I like this recipe because it is easy to make and I have almost every thing on hand. I will make them time and time again! I love the mayonnaise glaze...it is just right. Glad you like the recipe, Marilyn, I love it, it is one of my personal favorite...it never seems to have caught on wildly among readers, but I absolutely love them. And, yes, I think coconut would be a nice sub for walnuts, let me know how that turns out!
