    Mennonite Freezer Cookies

    Mennonite Freezer Cookies

    Mennonite freezer cookies are one of these "Great Depression" recipes, recipes in a pinch that you can throw together with what you already have in your pantry. I remember making this one with my girls.

    These Mennonite freezer cookies were a great one to make with my girls because they were so easy. We had all the ingredients on hand, mixed, kneaded, rolled and popped it into the freezer.  Do be careful of the baking.  I didn't think they looked done at 10 minutes, so I let them go to 15 minutes when the edges were turning golden.  I thought those were too done for my taste.  I should have taken them after 10.  They are a very "plain" cookie (What you can your expect with this ingredient list?), but with some frosting, then it's a really nice cookie.   If I were doing it over again, I might experiment with adding some cocoa to the mixture.  Anyway, a thumbs up for the recipe if you are looking for an easy cookie that isn't overpoweringly sweet.

    These cookies are typical of ones you find in Amish and Mennonite kitchens, which tend towards the basic and bare minimum in terms of ingredients.

    Mix until you get coarse crumbs and then start kneaded it together with your (washed) hands

    What makes this a "Mennonite" recipe is that, one, it comes to us from a Mennonite woman in Ohio. Two, and this was especially true decades ago, most Amish wouldn't have had access to freezers, while some more progressive Mennonites would have.

    You definitely want to leave the cookie dough in the freezer for about an hour or two, or overnight in a refrigerator. That really allows the flavors to meld before baking.

    I wrapped it in parchment paper and stuck the dough in the freezer for about 90 minutes and then took it out and sliced and they sliced really nicely.

    🍪 Mennonite Freezer Cookie Ingredients

    • 1 /2 cup shortening
    • 1 cup sugar
    • 1 egg
    • 1 teaspoon vanilla
    • One and one half cups flour
    • Half teaspoon baking soda
    • Half teaspoon salt

    📋 Instructions

    1. Cream shortening, add sugar eggs and vanilla.
    2. Mix well, sift together dry ingredients.
    3. Add to other ingredients.
    4. Shape into a log.
    5. Place in refrigerator for several hours or overnight.
    6. Slice and bake 10 minutes at 375.
