This is Mennonite Summer Fruit Dessert is a great large dessert to make during the summer, a combination of cake and fresh fruit and it feeds a lot of people.

So this is a recipe that shows up a lot at church potlucks and summer picnics among the Mennonites. The recipe is versatile in that you can use whatever fruit happens to be in season. Add blueberries and strawberries for a patriotic color splash, or use fresh peaches and raspberries to add a tangy twist. Whatever fruit you choose, you aren't likely to have leftovers with this popular dessert!
I love this desert because it tastes a bit like a "fruit cookie." It’s combination of a sugar cookie and fresh fruit. So at least it has a veneer of being “healthy “with the fresh fruit. You can use whatever you have on hand: blueberries, kiwi, strawberries, raspberries, peaches, you can let your fruit imagination run wild.
Peaches also do very well in this dessert. Bananas and apples probably not as much as some other fruits. And, yes, if you decide to serve some vanilla ice cream with it, that will double the "refreshing" factor of this dessert. I mean, you can enjoy this dessert any time of year, but enjoying it on a hot summer day is optimum.
The crumby, sugary topping is outstanding also. For the topping, you can use brown sugar or regular white sugar. I tend to lean towards using the brown sugar.

Cake layer:
- 2 cups all purpose flour
- 2 teaspoon baking powder
- 1 cup sugar
- ⅛ teaspoon salt
- ½ c butter
- 1 cup milk
- 2 beaten eggs
- 2 teaspoon vanilla
Fruit layer:
- fresh or frozen unsweetened fruit of choice-apples, peaches, berries, apricots, plums, etc.
Topping:
- ¼ c melted butter
- ¾ c all purpose flour
- ¾ c sugar

Cake layer:
- Blend flour, baking powder, sugar, salt, and butter in a large bowl.
- Stir in milk, eggs, and vanilla.
- Spread in a well greased jelly roll pan (17x11x1").
Fruit layer:
Spread favorite fruit over cake layer
Topping and baking:
- Combine topping ingredients until crumbly.
- Sprinkle over fruit and bake at 375 for 30-35 minutes.
- Yields: 40 squares.

If people don't uae your res. for your food they are missing the best darn res. I have made as much as 3 res per day. where I live there are homeless persons. I feed as many as 8 to 10 people per day. they have thanks to GOD for there food and when they go out I thank them for coming and they thank me. there are 2 people that ask if they could pay for the food. I can't wait to try this recipe. In the summer, I stock up on local fresh berries and put them in baggies in the freezer so in the winter we can enjoy last summer's sunshine. This is going to be GREAT!! It's printing as we "speak"
