    Mrs. Stutzman's Homemade Baking Mix

    HOMAMDE BAKING MIX

    This is a recipe for homemade baking mix sent to me by an Amish woman in Ohio.  Forget Bisquick, this Amish woman has a recipe for her own but she went above and beyond that, she wrote out a chart giving seven quick recipes for the mix. Very kind of her to share it with us!  These mix recipes are simple, yet flavorful, and really are quintessentially Amish recipes.

    Ingredients
    • 9 cups sifted flour
    • 1 /2 cup baking powder
    • 1 tablespoon salt
    • 2 teaspoons cream of tartar
    • 4 tablespoons white sugar
    • 1 cup nonfat dry milk
    • 2 cups shortening
    Instructions
    1. Sift together dry ingredients.
    2. Cut in shortening until it resembles coarse cornmeal.
    3. Store in airtight container and use like you would Bisquick.
    4. To measure mix, lightly put in cup and level.
    5. Do not pack.

    At first I wasn't sure what the woman's chart was exactly, but then I quickly realized, oh, these are quick recipes using the mix.  How cool!  So if you go below to the biscuits all you need to do is add water and bake!  So cool.  The other mix recipes need to have an egg  or some other simple ingredients added.  I can't wait to try some of these!

    Homemade baking mixt

    1 DOZEN BISCUITS:  3 cups of mix and 3 /4 cup water.  Blend only until moistened.  Drop by teaspoon onto lightly greased cookie sheet. Bake at 450 for 8 to 10 minutes.

    PANCAKES (18 medium or six large): 3 cups mix, 1 egg, 1 1 /2 cups water and blend.

    MUFFINS (1 dozen): 3 cups mix, 2 tablespoons sugar, 1 egg, 1 cup water.  Mix water and egg and blend with dry ingredients. Bake at 450 for 12 mins.

    GINGERBREAD (8 X 8 pan): 2 cups mix, ¼ cup sugar, 1 egg, 1 /2 cups water, ½ cup molasses, ½ teaspoon cinnamon,ginger and ground clvoes.  Bet egg, water and molasses.  Blend dry ingredients. Gradually add liquid.  Bake at 350 for 40 minutes.

    DROP COOKIES:  3 cups mix, 1 cup sugar, 1 egg, 1 /3 cup water, 1 teaspoon vanilla, 1 /2 cup nuts or chocolate chips.  Blend and drop on cookie sheet. Bake at 375 for 10-12 minutes.

    COFFEECAKE: 3 cups mix, 1 /2 cup sugar, 1 egg, 2 /3 cup water....topping: 1 /2 cup brown sugar, 3 tablespoons buter, 1 /2 teaspoon cinnamon, ¼ cup chopped nuts.  Blend. Cover with topping and bake at 400 for 25 minutes.

    CAKE: Yellow or chocolate, two 8" pans:  3 cups mix, 1 1 /2 cups sugar, 2 eggs, 1 cup water, 1 teaspoon vanilla, 1 /2 cup cocoa (if chocolate).  Blend sugar into mix. Beat eggs and water. Add 1 /2 water to mix.  Beat 2 mintues. Repeat and bake at 325 for 25 minutes.

      The muffin mix should probably say 12 min not 2 minutes. I am going to make a batch this week sounds good.
