Eggs are an essential part of any Amish cook’s repertoire. They are protein-packed and plentiful on most Amish farms. And cheap. Free, usually. So eggs can feed a lot of people at almost no cost, pack a protein punch, and are always on hand. So those are a winning combination on an Amish farm. “Skillet meals” like this one my mother made are VERY popular in Amish kitchens because they are just so easy to throw together. Here’s my Mom’s recipe:
- Several links of turkey sausage
- hash browned potatoes
- two eggs
- cheese (shredded sharp cheddar)
- Brown the hashed browns in an olive oil coated skillet.
- Add mushrooms and onions.
- Add turkey sausage, eggs, and cheese
