An Amish woman in Oklahoma shares with us a recipe for homemade Twinkies!  Ah, Heaven.  I haven't eaten a real Twinkie in a long, long, long time  (I'm perfectly capable of becoming overweight without eating them, thank you).  But a homemade Twinkie?  Now that is intriguing!
Personally I did not miss Twinkies too much when they disappeared from store shelves for awhile back in 2013. Â A regional brand, TastyKakes, quickly filled the void around here. Â Not that I bought TastyKakes any more than I ever bought Twinkies. Â I think Hostess came out with a "healthy Twinkie" back in the "Fat free" craze days, but the it was so small that you could pop it into your mouth in one bite. Â Not much of a snack. Â This homemade recipe is more my speed!
As is typical with many Amish recipes instructions on this recipe are a little bare and spare, but if you can figure them out I think you'll have an awesome dessert! Â There is no baking time given in the version that I have so you'll have to monitor it carefully.

- Cake: 1- 3 ounce package instant vanilla pudding
- 1 cup water
- 1 yellow cake mix
- 4 eggs
- 1 /2 cup oil
- Frosting:
- 1 /2 cup crisco
- 2 cups powdered sugar
- 1 /4 cup milk
- 1 teaspoon vanilla
- Mix cake mix, pudding, eggs, water and oil. Grease 2 sheet cake pans: line with wax paper greased on both sides.
- Divide batter evenly into the two greased pans.
- Bake at 350 until done.
- Cool
- Mix frosting.
- Spread onto one cake.
- Invert the other on top.
- Cool and serve

My daughter and I often make this recipe. Bake at 350 degrees in 2 jelly roll pans for appr. 10-12 minutes-don't overbake! A yummy variation is to use devils food cake mix. Tastes very similar to whoopie pies but much quicker and easier to make!!
