    Amish Bacon Treat

    This short recipe was scribbled on the back of another recipe an Amish woman sent me.  Bacon seems so popular these days that I thought I should decipher it and share it with you.  Bacon has never gone out of style in Amish kitchens, by the way.  Butchering of pork is usually done in the winter and bacon is one of the favorites from that day.

    You'll find BLT sandwiches, bacon in salads, for breakfast, for supper, and just generally everywhere and anywhere on Amish menus!  The name of this recipe is kind of funny.

    I chuckled because it sounds vaguely like a dog treat, but this bacon treat is for humans!:)bacon

    Ingredients
    • 10 – 12 slices of bacon
    • sleeve of crushed saltines
    • 3 eggs
    • 1 tablespoon of butter
    Instructions
    1. Melt butter in a cast iron skillet over low heat.
    2. Crush crackers on a plate.
    3. In a separate bowl, beat the eggs very well.
    4. Then dip bacon slices into the beaten eggs, completely coating on each side.
    5. Then roll the bacon slices into the cracker crumbs so that each side is completely covered in crumbs.
    6. Put into buttered skillet over low heat and brown each crumb-covered bacon slice on each side.
    7. Serve warm.
    8. Note: if you like your bacon very crispy, fry the bacon before dipping it in eggs and rolling it in crumbs.
    9. If you like your bacon more on the “rare” side, just dip slices in eggs, roll in crumbs and brown.

      Should the bacon be fried before coating it with egg and crackers? Could you share the other recipe that was on the back of this one? Kevin, you have me curious!

        Okay, Steve, I'll dig it up and share the other side recipe in the coming days....As far as your other question: good question and here's my answer: she didn't write specifically the answer to that. But I know some people - like me - like their bacon extra crispy...if you're one of those people, yes, you want to fry it first...if you prefer yours more "rare", then you could dip it in the eggs raw, coat it with the cracker crumbs and then fry it...I think it comes down to how well-done do you like your bacon?

      Sure sounds good....love bacon.......don't eat a lot of it tho.....but will have to try this recipe...I do my bacon in the oven and I wonder how it would be to fix it that way .....has anyone made this in the oven ?
      Kevin, have you had this before ? You probably ate it at Lovina's right ?

      There is a steak restaurant here in Texas (in the boonies) about an hour west of where I live in Katy that serves the most humongous steaks I've ever seen - and chicken fried BACON (with gravy on the side). Sounded too weird not to try and I'm sorry to say it was AWESOME. This kinda sorta reminds me of it. Fond memory.
