Cold winter mornings are especially tasty times for homemade coffeecakes. Â Add a splash of summer to your coffeecakes by incorporating some fruit into them. Â Yum! Â Blueberries and bananas can at least make us taste warmer days even as the snow swirls outside.
Blueberries and bananas are both popular among the Amish. Â These are two fruits that you can regularlyfind stocked in Amish-owned bulk food stores. Â In fact, basic banana bread and blueberry muffins are staples in Amish kitchens. Â Â The increasing Amish presence in Maine means that blueberries are really within reach for Amish cooks there. Â Among the Maine Amish blueberries are used in more than muffins, they are put into cookies, cakes, and even salads.
To help ward off the winter blahs a bit Rachel made this delicious coffeecake. Â It is a recipe that comes to me from an Amish woman in Kentucky, hardly a blueberry capital. Â This coffeecake makes a delicious start to the day. Â I'm someone who likes sweets so I might even add a glaze to it or a sugary crumb topping, but I'll leave that to you to do, this coffeecake tastes great just on its own!
- BLUEBERRY BANANA COFFEECAKE
- 1¼ cups unbleached all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon fine salt
- 2 large eggs, at room temperature
- 1 teaspoon pure vanilla extract
- 1 stick unsalted butter, at room temperature
- ¼ cup granulated sugar
- ½ cup brown sugar, packed
- 3 very ripe bananas, peeled and mashed with a fork
- 1 cup blueberries {if using frozen, thaw before using}
- Preheat oven to 350 degrees.
- Grease your favorite coffeecake dish -- an 9 x 13 rectangular glass baking dish works well.
- Sift the flour, baking soda and salt into a medium bowl and set aside.
- Whisk the eggs and vanilla together in a liquid measuring cup with a spout and set aside.
- Cream the butter and sugar until light and fluffy.
- Gradually pour the egg mixture into the butter, while mixing.
- Add the bananas {the mixture will be lumpy}.
- With a rubber spatula, mix in the flour mixture until just incorporated.
- Fold in the blueberries and transfer the batter to the prepared pan.
- Bake until a toothpick inserted into the center of the coffeecake comes out clean, about 25-30 minutes.

This looks delicious! I guess I never thought about combining blueberries and bananas. We like both,so it makes sense! I'm with you,Kevin..I think I'd add a crumb topping.
