There is a recipe an Amish cook sent me for"cinnamon cream cheese roll ups." This recipe duplicates this delicious treat that I stumbled upon at one of my favorite Amish bulk food stores in Indiana.

Cinnamon is an inexpensive and readily available spice that almost any Amish cook keeps a supply of on hand. Generally, Amish cooks are so inventive and creative as long as they have some sugar, butter, maple syrup, molasses, or cinnamon on hand they can make a sweet treat out of almost nothiing
This Amish cinnamon cream cheese roll ups recipe is a great example of such culinary creativity!
I'd not say this is an "Amish recipe" in origin, but I can see why it has become popular with Amish cooks. These are right up the wheelhouse of most Plain cooks: a sweet, from-scratch dessert that is a hit with kids when they come home from school. And they are surprisingly easy to make, so the kids can help make them and eat them. This recipe is an amazing testament to what you can do with a slice of bread!
Or in the case of adults - eat them and eat them and eat them - until they are gone. I've heard these called "crack sticks" before, because they are that addictive. My weight has yo-yo-ed all year long and stopping at Amish bakeries like the one I got these at has certainly been a contributing factor to the upward yo.
Store these in a sealed container and watch them disappear. I think I'd add a touch more cinnamon also, but that is just me:)
These are delicious for snacking. Make sure you line your baking sheet with parchment paper for less mess.
There are variations on this recipe you can try, like using a sweetened cream cheese, confectioners sugar, or adding some vanilla extract.

- ¾ cup powdered sugar

You can us any kind, a lot of Amish would use day-old white bread!

I would not store them unrefrigerated. They'll keep for days in the fridge, just keep them out to serve them.

These look delicious and I would love to try them. But I live in the same house as my son and daughter in law. She is severely allergic to cinnamon. Even if it is hours after I have baked with cinnamon and when she walks in the kitchen her sneezes are crazy. Is there anything I can substitute for the cinnamon?

You could try swapping it out with nutmug or allspice, those are probably the closest subs!
