    Homemade Amish Macaroni Salad

    This variation is a little different...the recipe was given to me by an Amish woman in Indiana and, wow, this makes a great mac salad!

    Homemade Amish Macaroni Salad

    Ingredients
    • 3 cups cooked macaroni
    • ½ cup carrots
    • 1 /2 cup celery
    • 1 /2 cup onion
    • 2 tablespoons mustard
    • 1 cup Miracle Whip
    • 2 tablespoons apple cider vinegar
    • 1 /2 teaspoon salt
    • ½ cup sugar
    • 2 tablespoons milk
    • salt and pepper to suit taste
    Instructions
    1. Mix the macaroni, carrots, celery and onions in a big bowl until evenly combined.  In a separate bowl, mix mustard, Miracle Whip vinegar, salt, sugar, milk, and seasonings. Combine with macaroni mixture and toss until thoroughly mixed.  Chill and serve.

      I make my macaroni salad the same way, but add hard boiled eggs, too.

        Rita - Lovina does sometimes add eggs depending on how her hens are laying, this is a good recipe!:) - kevin

      This recipe for Macaroni Salad sounds so delicious. Are the veggies,
      carrots and celery, sliced, diced, grated or what? I guess it may not
      actually matter, but should be left to personal preference. ( hard boiled
      eggs sound extra yummy, too.)

        Diana,
        Diced would probably be how Lovina would do it, but you are right...there's no reason why you couldn't grate the carrots...very much a matter of personal preference. The celery you would want to dice into as small of pieces as possible to keep the "crunch" even distributed throughout the salad. This is a good recipe! - Kevin
