    This could be the star of any summer picnic

    Green beans or a sure sign of spring and summer at Amish farm stands.  The fresh-from-the-earth emerald green beauties can be put into soups, stews, casseroles, canning jars for future use, and even salads like this wonderful Amish Green Bean and Bacon Salad.

    Green beans sing spring and summer, so there’s nothing better than opening up a fresh jar of home-canned green beans in the middle of winter. Most Amish homemakers will plant some green beans in the garden and preserve some for the winter.

    There’s no comparing the taste of homegrown green beans with a can of Freshlike.  The homegrown ones taste earthy and flavorful and the canned ones can be limp, soggy, and salty.  If you are lucky and you are able to visit Amish country in the spring or summer you may find a roadside stand run by Amish gardeners, and often they’re selling green beans.  If so, take the opportunity to buy some if you can. Again, the taste of these homegrown green beans is so much better, in my opinion, then canned. And even froze. This Amish Fresh Green Bean Salad“checks a lot of boxes “when it comes to flavor.

    For beginning gardeners, green beans are among the easiest veggies to cultivate. So often you'll see green beans being cultivated in the gardens of new Amish homemakers. Green beans thrive in slightly acidic soils or neutral. Pick a spot that drains well and gets enough sunlight and you are good to go! This is a great guide to growing green beans.

    This recipe has a bit of everything: bacon, eggs, onion, see, even if you don't like green beans a whole lot, there are enough different flavors where there is something in here for everyone!

    All of these flavors meld together well. The bacon in this recipe is what really blends well with the beans for amazing flavor!

    Amish Fresh Green Bean Salad

    Amish Green Bean and Bacon Salad

    • 6 slices bacon, fried and crumbled
    • 1 pound fresh green beans or 1 pint cooked green beans
    • ¼ teaspoon salt
    • ½ cup celery, chopped fine
    • 2 to 3 hard-cooked eggs, chopped
    • 1 small onion, chopped fine
    • Pickles, chopped fine, optional

    DRESSING

    • 1 tablespoon onion, grated
    • ⅓ cup vinegar
    • 2 tablespoons sugar
    • ½ teaspoon salt
    • Dash of pepper, paprika, and garlic powder

    📋 Instructions

    1. Fry bacon until crisp; then crumble.
    2. Add green beans, small amount of water, and salt to bacon drippings.
    3. Cook just until tender.
    4. Mix with celery, eggs, onion, and pickles, if using.
    5. For the dressing, Heat ingredients together until boiling. Pour over green beans immediately or chill and serve over cold beans.

    Ingredients
