    Amish Ham & Cheddar Waffles For Easter

    Looking for something a little bit different on Easter morning?  This is a favorite among some Amish.  The recipe is from the Amish Cook archives. This recipe was tested by one of our site regulars, Barbara, using a stove-top Wagner Ware #1408 waffle-maker, something you'd see in many Amish kitchens. Barbara reported that her husband was a little skittish about the idea of putting cheese in waffle batter, but he ended up really liking them.  You can top these with butter and maple syrup, just like a regular waffle and you get a great mix of sweet and savory.  This is what the waffles look like on the stove-top. Yum!

    HAM CHEDDAR WAFFLES

    1 ½ cups flour

    1 teaspoon sugar

    1 ½ cups milk

    1 ½ teaspoons baking powder

    ¼ teaspoon salt

    1 large egg, slightly beaten

    4 tablespoons butter, melted and cooled

    2 ounces of thinly sliced ham, chopped

    1 cup of shredded cheddar cheese

    Heat waffle iron. In a large bowl, whisk together flour, baking powder, sugar and salt. Stir milk, eggs and butter into flour mixture until just combined. Add ham and cheese. Pour ¾ cup batter onto waffle iron. Cook until waffles are golden, 8 to 10 minutes.
