    Amish Pot Roast & Noodle Casserole

    If it's easy, quick, and feeds an army, than the recipe will automatically find favor among Amish cooks. The average life of an Amish housewife is filled with laundry, child-rearing, never-ending mending, milking, canning, paying some bills, and just keeping the house running. Oh, and also cooking meals.

    Amish Pot Roast and Noodle Casserole

    So, yeah, if it's quick and easy, it's a bonus. That is where this easy pot roast and noodle Amish casserole comes into play. This recipe is popular in Amish farm kitchens because it can be made quickly.

    This recipe is a very typical, easy Amish casserole that contains everything you really need for a hearty meal. My parents made the casserole just as the recipe appears but this is one of these recipes that has plenty of "elasticity", in other words, you can dump some potatoes and carrots in, or some corn, and spice it up the way you want: garlic powder or a hint of cayenne pepper if you like spice.

    Beef chunks and other ingredients

    The chunk beef in this will typically be fresh from their own home-raised steer. Many Amish have a steer or two they raise for meat and a milking cow. All of these really lend to a fresh food supply. This is called a pot roast and noodle casserole, and that is what most Amish cooks would use - a chunked up pot roast. But you really could use any kind of beef you have on hand, even just hamburger.

    Cream of mushroom soup is what the recipe calls for, but we added fresh mushrooms to it also, that was a nice combination

    Homemade noodles are ubiquitous in most Amish homes and they find their way into meals like this!

    Ada Yoder's Pot Roast and Noodle Casserole

    Okay, now, let's try this casserole. The recipe - one of a gazillion like it found in Amish cookbooks - came to me from an Ada Yoder, an Amish mom and cook who lives in the settlement of Guthrie, Kentucky.

    🍲 Casserole ingredients

    • 1 pound beef chunks or ground beef
    • 1 chopped onion
    • 1 can tomato soup, undiluted
    • 1 pound egg noodles
    • 1 can cream of mushroom soup, undiluted
    • 1 tablespoon olive oil
    • Paprika (optional) 

    📋 Cooking Instructions

    1. Heat oven to 375 degrees F.
    2. Sauté chopped onion in olive oil. Add beef. Cook well. Add tomato soup.
    3. Cook egg noodles according to directions on package. Drain well.
    4. Add cream of mushroom soup.
    5. Grease casserole dish.

    Ingredients
      

    • 1 pound beef chunks
    • 1 onion medium chopped
    • 1 can tomato soup diluted
    • 1 pound egg noodles
    • 1 can cream of mushroom soup undiluted
    • 1 tablespoon olive oil

    Instructions
     

    • Heat oven to 375 degrees
    • Sauté chopped onion in olive oil
    • Add beef. Cook well
    •  Add tomato soup.
    • Cook egg noodles according to directions on package
    • Drain well
    • Add cream of mushroomsoup.
    • Grease casserole dish
    •   Place ½ of beefmixture in bottom of casserole.
    • Add ½ of noodlemixture.
    • Put remaining beef on noodles
    •  Add remaining noodles.If desired, sprinkle paprika lightly over top of noodles.
    • Bake for 20 to 25minutes, or until bubbly.

      I just made this tonight for my husband, and he absolutely loved it. We live extremely frugally, so appetite exhaustion is so real. You website is a wonderful repository of recipes I can afford, I can bring a smile to my husbands face while still minding my budget.
