    Quick Beef and Noodle Company Casserole

    Even Amish cooks, perhaps especially Amish Cooks, need quick recipes.  Just imagine that suddenly Uncle Leroy and Aunt Katie arrive from a distant settlement  with no notice and a quick supper needs to be whipped up. Well, something like this "Quick Beef and Noodle Company Casserole" would fit the bill.  I got this recipe from one of my favorite Amish cookbooks, one from an Amish community in Montana.

    My parents attempted this recipe and it did live up to its billing, it was quick and easy.  The recipe calls for peas, but they didn't have peas, so they substituted green beans.  They said the meal was very good but that it probably would have tasted better with peas, green beans are a bit more acidic and often don't do quite as well in casseroles.

    Do the Amish use canned soups?

    Yes, canned soups have found their way into Amish culinary culture. The post-WWII conveience food boom introduced the Amish to all sorts of new-to-them foods and canned soup become a staple in Amish pantries, mainly used as an ingredient in casseroles, etc.

    Okay, here is the recipe which has become a family favorite:

    You can never go wrong with noodles and hamburger

    This recipe is designed to be quick and easy. Now if you want to ramp it up, there are all sorts of things you can do. You can add in some sliced tomatoes or tomato sauce. You can flavor it up with some sour cream or cottage cheese.

    Cook the noodles first

    We think just nice twisty egg noodles do best in this quick beef and noodle company casserole, but you can use any kind of pasta. Ziti or corkscrews do well in this.

    And cook the hamburger first...

    Try to use the most lean ground beef possible in a large skillet. Use ground turkey for a nice alternative. I like to season with a little black pepper and maybe some chopped green peppers, green onions, or a white onion . You can also season your hamburger with Italian seasoning or garlic powder or garlic salt.

    And let the sunlight hit your casserole (actually, not a requirement, just thought it made a cool pic)

    Spaghetti sauce can be used in this casserole. As far as ground beef casseroles go this one is flavorful and easy, a perfect comfort food. Use a deep baking dish, spray with cooking spray for no-mess.

    My parents used green beans, but the original recipe called for peas...probably works best with peas

    I am not sure I would have subbed out green beans for peas, I probably would have used corn. Corn does well in a beef casserole.

    Top with cheese or butter bread crumbs (or both!)

    Pop in the oven and watch it bake up nice and golden brown. I like a casserole like this that doesn't have a ton of ingredients

    You can cover the casserole with foil when baking.

    A hearty meal!

    A shredded Cheddar cheese does best with this casserole, but mozzarella cheese or even parmesan cheese is fine. Sprinkle with kosher salt. Store leftovers in an airtight container and refrigerator or stick in the freezer.

    🍲 Quick Beef and Noodle Casserole

    • 1 pound hamburger'
    • 1 medium onion, chopped
    • 1 /2 pound noodles
    • 1 pint peas
    • 1 can mushroom soup
    • 1 1 /2 cups milk
    • salt and pepper
    • Optional topping of either cup of shredded cheese or buttered bread crumbs

    1. Fry hamburger and onion.
    2. Drain.
    3. Cook noodles.
    4. Mix mushroom soup and milk and combine with noodles, peas, and meat mixture.
    5. Bake in a greased casserole dish at 350 for about an hour. Top with buttered bread crumbs or cheese.

    This is an easy proten-packed pot of deliciousness that can be assembled quickly for company.

    Ingredients
      

    • 1 pound hamburger'
    • 1 medium onion, chopped
    • 1 /2 pound noodles
    • 1 pint peas
    • 1 can mushroom soup
    • 1 ½ cups milk
    • salt and pepper
    • Optional topping of either cup of shredded cheese or buttered bread crumbs
